The Gong Fu Cha Tea Ceremony is a traditional Chinese tea ritual that focuses on the perfect preparation and presentation of tea. Gong Fu means the art of doing something well, and Cha means tea. This ceremony is characterized by the use of more tea leaves for less water than in traditional preparation.
Here is a simplified procedure for making tea in the Gong Fu Cha style:
1. Heat the utensils: Heat a teapot or gaiwan with hot water and then pour it out. This will steam and bloom the tea leaves and keep the water warm.
2. Pour the tea: Pour the tea leaves into the heated teapot (e.g. 3 g of tea per 1 dcl of water).
3. Rinse the leaves. Pour boiling water over the tea and drain immediately (so-called rinsing). This will wake up the tea leaves.
4. First infusion. Pour hot water over the tea again and let it infuse (about 30-60 seconds).
5. Repeat infusion: Infuse the tea leaves again and again (2-8 times) with shorter infusion times.
6. Pour into cups: Pour the tea into the cups in a clockwise circular motion.
This way you can enjoy a fresh infusion and gradually discover the different layers of flavor of the tea. Each infusion will be different and interesting.
